Well... I'm still thinking the homemade legs only add instability because they raise the stove even higher. I'd say carry TWO sets of commercial legs to fit two different sizes of canisters if you must carry both sizes. Heck, the little stands can't weigh that much, they are MUCH more stable than the homemade ones and finally, they can't cost all that much.
Otherwise, back to the drawing board to find WIDER, LOWER leg material.
My solution to this and windscreen problems is to use an MSR Wind Pro with a remote canister and the accompanying aluminum wind screen.
More stability, less setup time and only a little more weight. Of course I'm a lightweight backpacker, not an ultralight one.
If the extra Wind Pro weight bothers one that much then it's time to switch to a well designed alcohol stove.
